What's For Dinner Week!!! PECAN PIE!

You made it!!! And you're reward? My mom's pecan pie!!! But before I get to that...

I want to welcome back my dear friend Hemstitch and Hydrangea. I missed her terribly and she's been through hell, but she is doing great! Go give her some love!

Landon had his cast off this week and again sat still as they SAWED it off and took stitches out...maybe he'll end up being a doctor! So now we have a temporary cast on. We can do baths again! Hooray!

I had to give him a little something for all his time in casts....and since he's obsessed with BOB THE BUILDER...

Do you think he likes it!!!??

Okay on to the recipe!

Get a pie shell or make the one from my chicken pot pie recipe first (you will only need the bottom this time not the top.)

Ingredients:

preheat oven to 400 degrees

2 eggs slightly beaten
1 cup dark Caro syrup (blue label)
1/8 Teaspoon salt
1 Teaspoon vanilla
1 cup sugar (white cane)
2 Tablespoons melted butter
1 cup chopped pecans

Mix eggs, Caro syrup, salt, vanilla, sugar, and butter. Stir in the pecans. Pour into unbaked shell! How easy is that!?
Bake at 400 degrees for 15 minutes then reduce to 350 degrees and bake for another 30-35 minutes. Filling should appear slightly less set in center. Let sit and cool.

Thanks for a wonderful and yummy week! Next week join me as I feature some of my favorite blogger stores! I have bought some cute stuff from them and can't wait to share!!!!!

You are kicking my butt on what's for dinner posts! My idea was to do one at the end of every week, but then I forget what I ate earlier in the week I did take your meatloaf suggestion on Monday though . . . mmm.

Wonderful to see H&H back. I can't believe what she's been through.

When Sophie was little she was Bob for two Halloweens in a row. Landon would make a great Bob! Start searching now for little toolbelt!
