Fabulous Recipes! In time for the 4th!!!


Here are some of my famous recipes I've been meaning to post. Perfect for summer! Even more perfect for the 4th!

Corn Salad

INGREDIENTS
6 ears corn, husked and cleaned
3 large tomatoes, diced
1 large red onion, diced
1/4 cup chopped fresh basil
1/4 cup olive oil
2 tablespoons white vinegar
salt and pepper to taste

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Cook corn in boiling water for 7 to 10 minutes, or until desired tenderness. Drain, cool, and cut kernels off the cob with a sharp knife.
In a large bowl, toss together the corn, tomatoes, onion, basil, oil, vinegar, salt and pepper. Chill until serving


Sheilas Seven Layer Dip:



2 cans refried beans spread thin; 1 16 oz. Container of sour cream & 1 envelope of taco seasoning mixed together then spread on top of the beans thinly.
2 large tomatoes chopped fine and put around the edges of the platter, next take cheese and shred and scatter, about 1 bunch. Scallions and chop and scatter over top, last add sliced olives and scatter on top of that.

What makes Sheilas so great is she spreads it thinly. Thin layers on a square platter and it still looks a bit fancy!


And of course my famous Pasta With Sausage and Peas!



Boil water for pasta.
Buy italian sausage and take it out of the casing.
Sautee until cooked through.

Add pasta to water and cook.
Drain and out back on the stove adding a healthy heaping tablespoon of butter. Mix around until pasta is not sticking. Add parmesan cheese and heavy cream to desired consistancy and taste. Add garlic salt, and pepper.

Boil water and cook peas. Add sausage to pasta and stir, drain peas and add them. DONE! DELISH!
Put aside.
