What's for Dinner Week!!! Daddy's Chicken Pot Pie!



I had the day from hell yesterday. Three hour glucose test for diabetes and it kicked my butt! Spent the rest of the day in bed! Onto happier things like...Chicken Pot Pie!!!


Chicken pot pie is one of the easiest things in the world. You can get a pre made pie crust but I make my own and it's so easy and tastes so good!!!!


Make the crust first if you're going to do it home made.

Ingredients:
1 1/2 cups sifted flour
1 1/2 Teaspoons sugar
1 teaspoon salt
1/2 cup mazola corn oil
2 Tablespoons cold milk (2% or higher)

Sift dry ingredients into a pie pan. Combine corn oil and milk in a measuring cup and whip with a fork until creamy.
Immediately pour over flour mixture. Mix with fork until flour is completely dampened. Press evenly and firmly with fingers to line bottom of pan and sides. Partly cover rim, making sure dough is to uniform thickness throughout. Flute edges.

Make second batch in separate bowl for top. Make into a flat piece for the top. Put aside until you pour in mixture below.



Now for the filling!


1 package of chicken breasts
2 celery stalks
2 big carrots
1/2 yellow onion
1/2 cup chicken broth.

Cube chicken breasts. Coat with flour. Saute in olive oil until browned. Remove chicken from pan and put aside.
Dice celery, carrots and onion. Saute in same pan until onion is clear. Add salt and pepper. Reduce heat. Add half a cup of chicken broth and cover. Cook until carrots are soft. Add chicken back in and stir. Turns into coated gravy. Fill pie crust. Then put top crust on. Remember you can make mini pot pies if you like by splitting up the dough!

Bake at 400 degrees until crust is golden brown!

This looks so delicious! Reminds me of Hudson's, then Marshall Field's and now Macy's Chicken Pot Pie that we use to eat as kids when shopping with my mom. I will have to try this!

Dr came home late last night-starved(what's new??) He loves frozen Marie Callender's frozen pot pie. The large sized one. Have to say-in a crunch not too bad.

I love a double crust chicken pot pie - a lot of the recipes just have you putting the crust on the top - this looks great.

I hate to hear you had such a bad day. Why in the world are you taking a glucose test so early in your pregnancy? I had to do the 4 hour test with The May and it was horrible. Chicken pot pit is my favorite meal. I can't wait to try your recipe. I hope today is better for you.

Mmmmm-the chicken pot pie looks so yummy! I wish my husband would eat it...he isn't a "foods mixed together" sort of guy. It makes our dinners sometimes boring. Every once in a while he'll get crazy and try something new...

You poor thing. That three hour test is a killer. I had GD with my first pregnancy, flunked the one hour with this one, and flat out refused to take the three hour. I'd rather test myself and go on "the diet" than go through that three hour test ever again. Hope you passed!

Glad I found your blog! Made the chicken pot pie...to die for! I will never buy crust again. Who knew you could mix it in the pie pan!!! So simple and delish. My family loved it!
