What's for Dinner Week!!! Daddy's Chicken Pot Pie!



I had the day from hell yesterday. Three hour glucose test for diabetes and it kicked my butt! Spent the rest of the day in bed! Onto happier things like...Chicken Pot Pie!!!


Chicken pot pie is one of the easiest things in the world. You can get a pre made pie crust but I make my own and it's so easy and tastes so good!!!!


Make the crust first if you're going to do it home made.

Ingredients:
1 1/2 cups sifted flour
1 1/2 Teaspoons sugar
1 teaspoon salt
1/2 cup mazola corn oil
2 Tablespoons cold milk (2% or higher)

Sift dry ingredients into a pie pan. Combine corn oil and milk in a measuring cup and whip with a fork until creamy.
Immediately pour over flour mixture. Mix with fork until flour is completely dampened. Press evenly and firmly with fingers to line bottom of pan and sides. Partly cover rim, making sure dough is to uniform thickness throughout. Flute edges.

Make second batch in separate bowl for top. Make into a flat piece for the top. Put aside until you pour in mixture below.



Now for the filling!


1 package of chicken breasts
2 celery stalks
2 big carrots
1/2 yellow onion
1/2 cup chicken broth.

Cube chicken breasts. Coat with flour. Saute in olive oil until browned. Remove chicken from pan and put aside.
Dice celery, carrots and onion. Saute in same pan until onion is clear. Add salt and pepper. Reduce heat. Add half a cup of chicken broth and cover. Cook until carrots are soft. Add chicken back in and stir. Turns into coated gravy. Fill pie crust. Then put top crust on. Remember you can make mini pot pies if you like by splitting up the dough!

Bake at 400 degrees until crust is golden brown!

I am also providing answers! I have touted Menu Planning Mondays, but now I will put my money where my mouth is and let you in on what I like to cook.

Now, you must know I am mainly a one disher. I mean everything in a bowl, mix, mix, mix and bake. then eat. Done. I like 'em easy and yummy. When I want Coq Au Vin I let Hubby step up because he is the true chef of our family. I'm just a mom who know her limitations. I need a recipe, I cannot ad lib and throw things together, OH NO! I almost burnt the house down making fried chicken. Are you with me?

Now I know everyones stocks are in the pooper so I thought I would help out by encouraging you to stay home and cook dammit! LOL! Some of these recipes I will be giving are family recipes. I mean old southern stuff, so they need a lot of love! On to the menu.

Tonight darlings, we are making Turkey Meatloaf. This was Granmommies recipe, and originally was beef, but I think the turkey is even MORE YUMMY!

Here you go:

Ingredients

1 lb ground turkey (or beef)
1/2 cup tomato soup
1 cup corn flakes (crushed)
1 egg (beaten)
2 or 3 stalks of celery (de string)
1/2 or 3/4 small white onion chopped
1/2 teaspoon salt
1/8 teaspoon pepper
2 slices of bacon (for top)

Preheat oven to 400 degrees.

Mix ingredients (except bacon) in a bowl. Form into a loaf and place into a pan lined with tin foil and sprayed with cooking spray. Pour 1/2 cup of boiling water over the top(this is Key!) Microwave bacon so it's partially done and then place across the top. Bake at 400 degrees for 30 minutes.

I serve it with broccoli and potatoes!

Landon has taken to calling any little toy guy in his trucks Daddy. The guy on his train? Daddy. Everyone's Daddy!

We went to get his cast changed today and well....there was Daddy again?



Dr. Daddy? No. That is not Daddy silly....



....to which Landon then looks at the old Lady in the picture and says "Mommy". Well, he showed me! Please lord tell me I don't look that old!

Pregnancy Week Continues!



Eleven weeks! Woohoo!
Saw the "blinky bean" today and she/he is looking great. Had her arms over her head! Touchdown! Too funny. I seriously cannot believe what a miracle it is.

Another thing that is so great about being pregnant is how people react. Everyone is so excited, wants to know when you're due, the sex etc. People are holding open doors and being sweet. Warms my heart!

We will be finding out the sex as soon as we can. (I'd find out who his college roommate is if I could! LOL!)

I am looking forward to planning his/ her room, and wardrobe!

One thing I am wondering about is how Landon will feel. He is one doted and loved on boy and I hope he doesn't feel too pushed aside. I will try to involve him in every way so he doesn't fee left out. They'll be about 2 years and 7 months apart. I can remember my step sister Robyn, she let Matt (nephew) drive his cars over his new baby sister Shannon (my niece). It was so funny! But they always played together and got along great because she wasn't overly protective. I want Landon to feel like he is the bog brother and that he is still in charge!

Whatever the baby is the dynamic will change. I am trying to enjoy having just one for now! My days are numbered!

Diary Of A Mean Pregnant Lady


Oh the mood I am in! This is what I'm like with no wine! LOL! This time around I am down right ornery. Poor hubby has to be on the other end of it because I have to be nice to Landon!

I think the combination of being tired and chasing a two year old and just being OLD, is getting to me. I find myself getting really pissed at hubby over such little things! I can't help myself! Oh boy...let's hope the second trimester I am more agreeable!

In the mean time since wine and Mojitos are out, I have found a few vices that are getting me through my "mean-ness".

So You're Pregnant! Feeling Like Crap?


I am thrilled to be pregnant, amazed and blessed to be doing it without the help of fertility doctors this time around.

When I was pregnant with Landon I was tired in the beginning and at the end but that was it! This time is a whole different story! I am tired, yes, (I feel like Rip Van Winkle!), but I am also having low level nausea A LOT! Makes it hard to eat when you're hungry! Yes, I am still hungry just nauseous! I can hardly cook dinner, and when hubby does I have to leave the room, but them I have no problem eating it!!! WEIRD!

I also am breaking out like a teenager (hello hormones it's me, the Mrs.)
This is annoying because I never have skin problems!


I am a high risk pregnancy for sure. I am 38, and with all that happened with Landons arm, they are NOT taking any chances. My joke to everyone about this pregnancy and what my doctor is doing for me, is this: She went to the Olympics (Landon's birth) and did not medal. This time (baby #2), she is getting the GOLD! She was less excited about me getting pregnant on my own and more concerned with getting me on all the preventive medicine she had always been planning when I told her we were going to try for another baby. Here's the protocol she has me on:

3 mgs Folic Acid
Prenantal vitamin
baby aspirin
2 pills of progesterone
2 pills of steroids
and
I do a shot every day of Lovenox, a blood thinner


Yeah. A shot. It sucks. I have figured out a way to make it not hurt though. Most times I can do it with relatively no pain. The blood thinner does not cross the placenta, it's for me. Turns out Landon and I had clots on both sides of the placenta and the doctor wants to be safe. I was worried about having a blood thinner and being pregnant, but doc says they give a blood thinner to people who miscarry a lot. So far so good.

The steroids are to make sure I don't get all clotty as well. They still say what happened to Landon was a lightening striking event, but they are not taking any chances!

I have to say it's taken some of my worry away to see how much everyone else is on top of this pregnancy!

So, tired, nauseous, zitty and sick of shots. Pretty. Poor hubby, he also has to deal with my "mood". I'll talk about that tomorrow!

One Year And Counting!


I can hardly believe it's been a year since I started this blog! I remember how it all began, I had googled "preppy napkin", because I wanted some cute preppy napkins for my china! Who knew I'd find this blog: Preppy Napkin!

Before this I had no idea what a blog was!
Being a writer of screenplays, I was looking for a creative writing outlet and after reading and getting comments from a few more blogs like Happy Homemaker, A Journey To Our Daughter, Magnolia Mama and Working That Preppy!

It all started with this post:

Surgery Day


Today is Landon's surgery. We will be home mid day with a sore arm and leg. Please pray he does well with surgery and the skin graft and is as comfortable as possible.

A few weekends ago we took Landon out to breakfast at the beach...what a sweet darling he is looking out at the waves. I just love him to pieces.

Aunt Ninky's Coming!


Aunt Ninky, my sister is coming to visit tomorrow. Landon's surgery was postponed until Monday, so we can have some fun while she's here!

Ninky and I are eight years apart and did not always get along growing up. Okay I tried to torture her because I had to babysit her all the time. Not fair! My funniest/ meanest thing I used to do to her was pretend Strawberry Shortcake was in my room with me and I would not let her in. She would cry and pound on the door and when I would finally open it I'd say she flew out the window. (Can't she do that?) I know, I'm mean!

In my defense she was always in my room and going through all my stuff! She even wrote in my diary (although she had no idea what it was!) And she blamed me for everything she did!

Eight years is a tough age difference but we've made it through! Landon loves his cool Aunt Ninky from NYC and I do too!

Sanity Break- A letter from Kenya


Hubby and I were lucky enough to go on safari a few years ago. It was one of the most magical trips we've ever taken. One of the reasons we chose the safari theme for Landons room was because we had real animal pictures!

I got an email recently from one of the guides who took us on our trip. I thought you might like to see life through a safari guides eyes...


"We are all just back from a safari in Shaba. The pan behind camp, next to the big rocky kopje, was full of water. It only happens once or twice a year, so it is quite exciting. Extraordinary to watch elephants drinking from where we normally watch them having a dust bath. This time they had a really good mud bath after their drink. The rain seemed to have got the lions excited too and they were mating next to the big spring. Down in the saltbush next to the river, there was a big tom leopard as well, albeit rather a shy fellow.

Charlie and Milo went crocodile catching before supper and caught the sweetest baby, (must of been born a year ago, cause it wasn't that small) who proved to have very sharp needles in his mouth and he made Charlie jump when he bit him on the hand. A flash flood came down the river the next day and the children - who had been playing on the beach by the rapids,- had to jump up the bank quite quickly.

Also been to stay at Deloraine, the lovely big house in the Rift Valley for some fun. I decided I needed to learn to ride sidesaddle, as my mother did. It all went very well, till I got over ambitious and tried jumping!! A bruised bottom and ego for a few days! "

The shoes are so comfortable it's insane and the picture of the black ones do not do them justice. They are adorable!!!!! Love the shirts too...I will be going back.
We are not heading into surgery tomorrow Landon through up last night and that will postpone it for sure. I guess we have a real bug on our hands!

Am I A Normal Parent Now?


It was the weekend from hell. Temperatures at 100 degrees, Landon still in a cast (surgery is this Wednesday) and us? Hubby and I? We're stupid. We took Landon in the pool because we were desperate and HOT! We took him in on Saturday afternoon. Now we are only a little stupid. We've had casts now for weeks and done baths and pool all with a bag tied on his arm.

This time we tied a bag to the arm and when we were done swimming we watched as water dripped out of Landons cast. Then it ran out! CRAP!

So off to the emergency room to get a new cast, because open wounds don't really like wet mildewy casts. After drama galore we got home at 11pm. Landon was still awake and fit to be tied. We were all exhausted.

Sunday morning Landon slept in and I THOUGHT our troubles were over. That was until he woke up and puked all over his bed. Not once mind you, but twice after I changed it. Before I had the pukeys to deal with though, I was reflecting on the couch and enjoying my morning sans Elmo. I was thinking of how many times I've read about emergency room dramas on all of your blogs, stitches, breaks, crazy temperatures...sometimes with all of Landons arm stuff we feel like we are always dealing with more than the average parent (although I am realizing everyone has something huge they are dealing with), but that Saturday night, I realized later, we were normal parents. That was kinda nice.

Today we are headed to the doctor to get a new cast. A non-pukey smelling one. Ahhhh parenthood!

Fabulous Book! Stori-telling!



Okay I should be reading something more intellectual and mind stimulating...blah...blah..blah...I am loving this book! I have NEVER been a fan of Tori Spelling, but somehow I watched an episode of Tori and Dean In Love and I was hooked. First of all she is hilarious, but what I really like about her is how she is dealing with the pain of the relationship of her Mother. They never talk and she has never met her grandchildren.

In the book you get to really see what it was like for her during the 90210 days and how she grew up under the intense control of her parents. I am half way through and I am riveted!

I promise after this I'll read War and Peace.

I am happy I voiced my very small political opinion, it was so interesting to see how everyone feels. Politics is such a passionate subject for people!!! I would love a mom to be VP one day...actually I would love a mom to be president!

What Were They Thinking? Sarah Palin For VP?



I like to keep politics to myself but I am just too annoyed not to post this. Okay, I'm happy McCain chose a woman. I have to admit that, but did they have to pick someone so ridiculous to make it seem like choosing a woman VP is a joke? She has zero experience, has had some illegal activities going on as Alaskas governor, has five kids (the youngest one just born four months ago with downs), and now they reveal she has a teen daughter who's pregnant!

Are they trying to get the white trash vote? I am sorry but I am confused! How will she care for all those kids and run the country? I have one and I can barely run my blog!!!!

Am I crazy? Do you guys think this was a good choice? I feel like this is insane!!!

Pirate Party!


My friends Heather and Morgan had the most fabulous Pirate Party for their son Levi's 3rd Birthday. Everything looked so incredible I just had to share!!!



They served corn dogs, sandwiches, fruit, veggie dogs, peanut butter and jelly sandwiches and renamed them all with a pirate theme!
